Carrot and Potato Soup

A warming and hearty soup that is budget friendly and simple to make. Perfect for those colder days when you want something delicious and nutritious.

Ingredients

2 tablespoons oil

2 small onions or 1 large onion chopped

3 medium stalks spring onions chopped

6 cloves garlic crushed

1 inch fresh ginger grated

3 stalks fresh thyme or 1 tsp dried thyme

2 bay leaves

6 medium sized carrots (400g) chopped

2 large potatoes (400g) chopped

1 vegetable stock cube

water

1 tsp smoked paprika

salt to taste

Yogurt or cream for topping (optional)

Method

1. Add oil to a medium sized pot over medium heat.

2. Add onions, spring onions, garlic, ginger, thyme, and bay leaves to the pot and sauté for 5 minutes.

3. Add the chopped carrots, potatoes, stock cube, and smoked paprika, stir well.

4. Add enough water to just cover the carrots and potatoes.

5. Cook for 15-20mins until carrots and potatoes are soft.

6. Transfer to blender or use an immersion hand blender to blend until smooth.

7. Serve hot with a dollop of yogurt or cream for garnish.
